Because Shiloh Farms’ grits are made from hulled barley (as opposed to pearl barley), they are considered a whole grain product, with 46 grams of whole grains per serving. These tiny chunks of the barley grain can be substituted in most recipes calling for grits and can easily take the place of hominy grits for those with corn allergies. A versatile cereal grain with a rich, nutty flavor, barley is naturally high in protein, fiber and a variety of essential minerals (including manganese, selenium, copper and phosphorus). It has the lowest glycemic index of any grain (about 1/3 that of wheat), making it a great choice for diabetics.
